Vegan Apple Butter Cookie SandwichSo I am a cookie lover.  Not too surprising, I think most people are.  I love cookie sandwiches, but really hate all the calories that are in them.  I mean you add two high-cal cookies together with a little somethin-somethin between them and it is a calorie bomb in the making!  Here are my Vegan Apple Butter Cookie Sandwiches, with fewer calories than a normal cookie sandwich, and so much more great flavor!

With all the cookie recipes that I have done on this site, which are based off the old oatmeal classic recipe with twists, so you may think that is my fave cookie of all time.  Not so.  My all time favorite cookie is the Nestle Toll House Chocolate Chip recipe, you know the one on the back of the bag?  Amazing cookie dough that every time I used to make it only half the batter ever made it into the oven.

So this awesome little cookie was veganized and desugared from the Toll House recipe.  There were no eggs in the batter, just the flax egg which gave the brown flecks throughout the cookies.  No real sugar, just the white no-cal sugar; no extra brown sugar at all.  I used vegan butter instead of the normal kind and voila-the classic cookie.

For the yummy inside to make these into awesome sandwiches, I used my Clean Vegan Apple Butter.  This was the perfect accompaniment to these cookies.  The classic Toll House cookie is meant to have the chocolate chips in it, and a ton more sugar.  With my cleaned up version it is less sweet, so the apple butter adds more texture and flavor.   They were amazingly good, and didn’t take a lot of time at all to do the cookie making and baking and boiling the apple butter.

So amazing.  Another work winner!  I took the whole batch to work, because we were having an event and I wanted to get our sugars working and give us a little snack to keep us going.  Everyone loved these cookies!  I even got asked for the recipe AND if I would make these bad boys again!  Vegan baking success!

2 1/4 C All Purpose Flour

1 Tsp Baking Soda

1 Tsp Salt

1 C (2 sticks) Earth Balance Vegan Buttery Sticks

3/4 C No-Cal Sweetener

2 Tsp Vanilla

2 Flax Eggs

1/2 C Clean Vegan Apple Butter

1.  Turn oven to 350 degrees.

2.  Make flax egg with 2 tablespoons milled flax seed and 6 tablespoons water.  Microwave 10 seconds then put in fridge till ready.

3.  In smaller bowl combine flour, baking soda and salt.

4.  In larger bowl combine softened butter, sugar and vanilla.  Mix then add flax egg.  Mix well.

5.  Slowly add flour mixture.

6.  Using a teaspoon portion out cookies (I got 48 cookies) and flatten the cookies with the back of the spoon.

7.  Bake for 9 minutes.

8.  Let cool completely then swipe on some apple butter.  Refrigerate to let everything harden.

9.  Enjoy!!
