I actually did it. I made my own pizza dough…and my own sauce…and finally, finally had pepperoni on my pizza!!! Yippeeee! AND-I am in love, love, love with Daiya Cheddar Shreds!!!! Real vegan pizza and a totally clean pizza recipe. Even better in a pizza pocket!
I have been wanting pizza since the middle of March and it was about time I splurged for myself. 40 days of clean eating and no processed foods was such a wonderful challenge, that I needed to gift myself with something yummy. I am a major pizza lover; Pizza Hut and Figaro’s Pizza are my two all-time favorite pizza joints ever. The crust of PH and the major cheesy goodness of it makes it the most sinful pizza around. And FP is the simplistic of pizza’s and has a great thinner crust. Mmmmm. And if I do have to go store-bought, it is Amys all the way-I mean so many different pizza’s so little time!
So I have made bread before but never my own pizza dough. As a kid I used to watch them make it through the lobby window at Figaro’s and I always thought it was the coolest thing ever. But actually doing it seemed intimidating. So to the internet I went to search for a clean and vegan pizza dough recipe. The first website from Google was veggieful and boy did I love this site. Loved the vegan recipe that had the easiest to follow directions, so I will send you there to veggieful because dough recipes are so exact and theirs was the best. I will give you my dough ingredients though-I of course had to change things up!
I will give two caveats to the dough directions. First I used whole wheat flour instead of regular white flour. I had it and wanted a whole wheat crust. I only had to add and extra 1/4 cup total after the initial ingredients were tossed together. With the kneading and rolling that is where it came in. It wasn’t horribly sticky for me-just kept adding a little more flour. Second, I preheated the oven to 200 degrees then turned it off. I put a cookie sheet on the top rack then the bowl with dough covered with a towel on the sheet and let raise for 45 minutes as directed.
Pizza Dough Ingredients
1 Packet Yeast
1 3/4 C Warm Water
3 3/4 C Whole Wheat Flour
1/2 Tsp Salt
1 Tsp Basil
1 Tsp Oregano
As for the sauce, that was the easiest thing to for me to do. I just treated it like a really good marinara sauce-tons of basil and oregano. I didn’t search for a sauce recipe, I just winged it. Turned out good-tons of minced garlic and heat. I started the sauce right before I took the dough out of the warm oven. I turned it on medium-low heat to start a slow boil. Yum.
1 32 Oz Can Crushed Tomatoes
1 Tbsp Basil
1 Tbsp Oregano
2 Tsp Black Pepper
1/2 Tsp Red Pepper Flakes
1 Tsp Parsley
1 Tbsp Garlic
So I made this into pizza pockets, or you could call them mini calzones. I had slightly baked the crust-not totally done so I could still fold them in half. I knew I was not going to close them like a pocket-I guess they were more like pizza sandwiches 🙂
The best part of the entire thing was that I had real toppings, vegan or not-I had pepperoni on my pizza! It has been over 10 years since I have had pepperoni. I watch my niece and nephews devour pepperoni and have been slightly jealous over it-but now, thanks to Tofurky (whom I have grown to love with a passion) I am now back in the pepperoni game!
And, even more amazing than the beloved pepperoni, I have found a vegan cheese that is tasty! It is a little bit of an oxymoron-tasty vegan cheese. I have tried a few different types and was totally grossed out-they were all slimy and didn’t melt like normal cheese, more like melted plastic. But I wanted to try Daiya. It is in magazines and I subscribe to them on Facebook, but have been too nervous to spend more money on vegan cheese that was going to be yuck…but seriously I lucked out and fell in love with Daiya Cheddar Shreds! It did have the weird texture, but oh man it was so creamy when melted. So oohy and gooey that I am now searching for coupons so I can by a fridge full of it- I am obsessed now!
1 8oz Pkg Button Mushrooms, sliced thin
1 Can Olives, sliced small
1 Small Green Pepper, chopped small
1/2 C Red Onion, chopped small
1 Pkg Tofurky Pepperoni Slices
1 Pkg Daiya Cheddar Shreds
2. Make pizza sauce.
3. Roll out dough and cut into 12 equal pieces. Bake for 5 minutes at 350 degrees.
4. Chop all pizza topping vegetables.
5. Place little crusts on baking sheet.
6. Top each little crust with sauce, pepperoni, veggies and cheese. Dab a little extra sauce on top of the toppings and fold each top.
7. Bake for 15 minutes and repeat.
PS…anyone know if Daiya does coupons??
