You know when you make a mistake in cooking and you think it will turn out bad, or gross? Or you think of food combos that shouldn’t really go together but in actuality could be really good? Oh the possibilities! Here is my Spicy Peanut Butter Hummus.
So the mistake came when I had two small containers for my work meals. I take my breakfast, lunch and snack to work everyday. I have one small container for peanut butter and one for hummus for my carrots. Well I had washed out the pb container but forgot to do the hummus one. I accidentally put the pb in the hummus container. Well I didn’t notice that error until I was eating my apple and pb and saw the hummus – I almost stopped eating the pb because I didn’t want to be tainted with the hummusy-pb. I thought it would be nasty.
Well color me surprised! I ate it and it was good! So I decided to come home and try and make peanut butter hummus. I decided to spice it up with some jalepeno. This turned out really good; it has a faint peanut butter flavor with nice bite of jalepeno to it.
2 Cans Garbanzo Beans
1 Jalapeno, washed and chopped
1 Tbsp Polar Sesame oil
3 Tbsp Jif Reduced Fat Peanut Butter
2 Tbsp Lemon Juice
3 Tbsp Silk Light Pure Almond Milk
1 Tsp Ginger
1 Tsp Garlic Powder
1/2 Tsp Black Pepper
1. Drain garbanzo beans and dump into food processor.
2. Add rest of ingredients.
3. Turn on processor and let go until completely mixed. Scrape sides if necessary.
4. Enjoy!!
I love peanut butter in savory foods, so I bet I would love this! Yum!
This hummus turned out so good. I have come to love PB in savory dishes also, so I am glad I tried this.
