GF Coffee Marshmallow Cookies

GF Coffee Marshmallow CookiesIt’s almost the end of the year and with my resolution about to hit me, I am cleaning out my cupboard of not-so-good for me foods.  Like these absolutely addicting Dandies marshmallows.  I decided to pair them up with coffee in these cookies – GF Coffee Marshmallow Cookies.

Let me start with saying how weird it is to find gluten in almost everything.  I don’t not eat it, but when I bake I think of my sister-in-law who is resistant to it, and I always want her to taste my baked goods.  So these cookies are an ode to her, though she doesn’t like coffee.  I don’t eat chocolate but in my head these cookies were like a hot cocoa with marshmallows on top.

These cookies have no added sugar; the only sugar in them is from the marshmallows.  I was a little skeptical, and when I tasted the batter while spooning the cookies I almost added some but didn’t.  I am so glad I didn’t because the cookies with the banana and marshmallow pieces actually tasted chocolaty!! OMG!  So.  Dang.  Good!

A side not on these amazingly sweet mallows – they are super sticky when trying to cut them.  I only used ten marshmallows and tried to cut one in half and then into fourths.  Well I barely got it in half and it was sticking to the knife, then the fourths were stuck to my fingers and wouldn’t get off.  I finally unstuck myself by eating the stickies, then popping everything (marshmallows, knife and cutting board) in the freezer for about five minutes.  I took them out and the knife still didn’t work.  So I got mad and just used my fingers and tore everything apart.

First mix dry ingredients.  Then freeze marshmallows.  Pour milk and coffee into small bowl and mix.  Add one banana and mash and mix with fork.  Take out mallows and cut or tear apart into small pieces, add them to coffee mix.  Add everything to dry ingredients and mix.  Use a small spoon and portion out.  Bake for 8 minutes.  Be ready for melted mallows –  let them cool for a minute before using a spatula to take off baking sheet.  You will need to soak the sheet in warm water to get the dried gooey’s off.  You will not be able to use the cookie sheets immediately so make sure you have two of them for all the cookies.

3/4 C Bobs Red Mill Oat Flour
2 C Oats
1/2 Tsp Baking Soda
1/2 Tsp Baking Powder
2 Starbucks Via Medium Flavor Coffees
1/2 C Almond Breeze Unsweetened Vanilla Almond Milk
1 Brown Banana
10 Dandies Vegan Marshmallows

1.  Heat oven to 350 degrees.
2.  Mix dry ingredients in large bowl.
3.  Freeze marshmallows for five minutes.
4.  Mix coffee and milk and mix.  Add banana and mash together and mix well.
5.  Take out marshmallows and cut or tear into small pieces.  Wet fingers if needed.
6.  Add marshmallows to coffee mixture and stir.  Add everything to dry ingredients.  Mix everything well.
7.  Spray baking sheets with non-stick cooking spray.  Portion out cookies.
8.  Bake for 8 minutes.
9.  Let cool slightly.
