Happy St. Patty’s Day everyone! I couldn’t let a holiday go by without having a good ole recipe to go with it. Since this is an Irish holiday I had to go with cabbage and potatoes and of course the green color – and I hope you are wearing green today. Don’t want to get pinched! This roasted veggie dish is awesome, with the veggie flavors coming through wonderfully through the spices. Enjoy these Onion Chive Roasted Cabbage and Potatoes any time!
I don’t know about you but my favorite way to make and eat cabbage is to roast it. Boiling, the only other way I know how to make it, just makes it too gummy tasting to me. And after roasting it, the cabbage always gets sweeter tasting and holds the spices really well. And this is the first time I have gotten my potatoes to hold up like a fry! Normally my potatoes are cut into chunks so they are more like hash or don’t cook all the way through so they are kinda gooey, but these babies were crispy and firm. Gosh who doesn’t love a good fry! The spices may seem like a ton but they do not over-power the veggies at all, and actually the black pepper came through and made it all just a tiny bit spicy. Yum!
Start by lining your baking sheets with parchment paper then washing and scrubbing the potatoes. Cut potatoes in half then half again, then into slices for fries. Take off the outer layers of the cabbage then quarter the cabbage. Slice out the core then slice the cabbage into strips. Spread fries and cabbage over baking sheets then sprinkle oil over everything. In a small container dump all the dried spices then mince your fresh dill and dump in container. Mix with a spoon then use the spoon to sprinkle over everything. It is a lot of spices so most will go over the cabbage – I sprinkled about 3/4’s then mixed everything with my hands then used the rest to sprinkle over the cabbage. Bake at 375 degrees for 20 minutes then take out and mix, then bake 25 more minutes. Enjoy!
1 Medium Cabbage, sliced
2 Medium Potatoes, sliced
3 Tbsp Bertolli Olive OIl
1 Tbsp Onion Powder
1 1/2 Tbsp Garlic Powder
2 Tbsp Dried Chives
1 Tsp Black Pepper
1 Tbsp Fresh Dill, minced
1. Set oven to 375 degrees and line baking sheets with parchment paper.
2. Wash and slice potatoes into wide sticks, like french fries then spread over baking sheet.
3. Take outer layers off cabbage and slice then spread over baking sheet.
4. In a small container mix dried and chopped herbs.
5. Sprinkle olive oil and herb mix evenly over all veggies – more over cabbage then potatoes.
6. Mix with hands then place sheets in oven.
7. Bake 20 minutes then take out and mix with spatula.
8. Bake 25 more minutes.
