No Bake Peach Raspberry Crumble-5You didn’t really think I would make it through a month without a dessert did you. As I said before – no need to deprive yourself of dessert while on this diet. I know I am supposed to be totally rethinking the way I’m eating, which believe me I am, but I also wanted a sweet treat. The Trail Mix Granola hit the spot for a treat, but now it’s time for a sweet treat. And some fruit. I love baked fruit – how about you? And what better way to enjoy baked fruit then covered with a small bit of crumble. Enjoy some vegan, gluten-free and sugar-free Peach and Raspberry Crumble for the Elimination Diet.

This yummy dessert is also the August Recipe Redux recipe. This months recipe is what a family would make to get themselves back in the routine of school and normalcy; no more holiday’s or summer fun. Back to the grind. Well in my family – the way to get everyone around the dinner table? Dessert. And you had to know that I would figure out how to have a sweet treat while on a diet – any diet. Luckily when you buy frozen fruit it is sweet when defrosted and heated. Add some raspberries heated down into a thick sauce? Wonderful. Add in some maple-date sauce? Oh. Gosh. Just give me a spoon so I can dive in. But add a crumble to the top? You will devour this no-bake recipe in a heartbeat.

Start by defrosting then dumping the peaches and chai spice into a saute pan along with half the bag of raspberries and all the the juice also. Save the raspberries for a smoothie the next day. Turn the pan to medium and warm. In a small food processor dump in soaked dates, syrup, and date water and process into a thick syrup. Pour syrup into the fruit pan and let heat together and soften peaches. In a small saute pan add oats and chopped almonds and toast on medium-low heat until just starting to smell toasted – do not turn away from this. It will burn if left unattended (trust me). Add in chai spice and maple syrup and warm then turn off heat. Spoon peaches into small dishes, then pour in raspberry sauce. Top with oat crumble. Enjoy!

1 Pkg Frozen Peaches, defrosted
1/2 Pkg Frozen Raspberries, defrosted
1/2 Tsp Chai Spice

10 Mariani Dates, soaked
2 Tbsp Maple Grove Farms 100% Pure Maple Syrup
2 Tbsp Date Water

1/2 C Oats
1/4 C Blue Diamond Whole Natural Almonds, chopped
1/2 Tsp Chai Spice
2 Tbsp Maple Grove Farms 100% Pure Maple Syrup

1. Defrost peaches and raspberries.
2. Pour peaches, chai spice, and defrosted raspberry juice and 1/2 the package raspberries into a saute pan. Bring to a boil then lower heat to let sauce thicken.
No Bake Peach Raspberry Crumble-43. In a small pan pour oats, chopped almonds and chai spice. Toast on low heat until just starting to smell toasted. Take off heat until fruit is done.
4. In small food processor add soaked dates, maple syrup, and date water and process until smooth. Dump into thickened fruit. Keep over low heat to combine all flavor – about five minutes.
5. Add maple syrup to toasted oat pan and turn on heat to low. Keep mixing until heated. Take off heat.
6. In small dishes add fruit then sauce then top with crumble.
7. Enjoy!
