This year it’s all about making homemade gifts for holiday presents. I made the mini chocolate zucchini loaves and froze them, the chocolate covered peanut butter cookies, and now it’s all about chocolate in a different way. Dark chocolate that is. One of my most favorite things is dark chocolate covered … anything. Well, really any chocolate covered anything – I’ll eat it, it doesn’t matter. Nuts, dried fruits, fresh strawberries, coffee beans. Love it all. For this little gift I decided to make different versions of my favorites. I love chocolate covered things, but it’s not the easiest thing to do is it – cover something in chocolate. They usually turn out lumpy or clumpy. Always edible, but not necessarily pretty. The next best way to get your sweet snack on and not care about something being covered? Chocolate bark with your choice of add-on. For these barks I wanted my favorites, but you can feel free to press in whatever you think will be awesome. My top favorite is chocolate covered coffee beans, so I picked up some bulk organic dark roast coffee beans. I also got some beautiful and huge unsweetened dried cherries because I just love snacking on them and who doesn’t want their favorite dried fruit covered in chocolate. I also used my favorite nut – raw almonds. There is just something about chocolate covered almonds that always seem so decadent. This would have been an easy gift to just buy for people, but it’s such a simple thing to make! And if you are last minute shopper or may have forgotten someone on your list? This is easy and fast!
Line two small baking sheets with parchment paper. Make sure you have your add-on’s out and ready to be pressed in. Dump one bag of chips into a microwave safe bowl and microwave in 30 second intervals until melted – it took about 3 minutes for these chips to melt. Use a spatula to pour onto the baking sheet then spread out over the sheet. The first pan is a little of each add-on sprinkled over the chocolate. Press each into the chocolate then put the pan into the freezer to harden the chocolate. Melt the second bag of chocolate, pour and spread over the second pan. Working in thirds of the pan, spread each add-on in only one third of the chocolate. This pan will be individual barks and the other is mixed. Put pan in the freezer; leave both in for 30 minutes or until completely hardened. Once hardened take the pans out then slowly start to pick up the parchment and gently break into pieces. Place in pretty bags for gifting. Making early? Just freeze it and then take out to give!
3 Ways Chocolate Bark,
1 C Dried Sweetened Cherries
1 C Organic Coffee Beans
1 C Raw Almonds
1. Line two small baking sheets with parchment paper.
2. In a small mixing bowl, dump one bag chips and microwave until completely melted.
3. Use a spatula to scrape all the chocolate onto the parchment paper then spread out thin-about 1/8 inch thick.
4. Sprinkle a little of each add-on around the chocolate then press in. Place in freezer.
5. Melt the second bag of chips, pour onto the second pan and spread out thinly. Place add-on’s in three sections and press into the chocolate. Place pan in the freezer.
6. Once bark is hardened, break into smallish pieces. Place in ziplock bag then freeze until ready to give.
