A dessert that is an all-time classic in it’s goodness, have a natural sweetness and a surprising tartness to it. A dessert you will love as leftovers … and maybe even for breakfast. That dessert is this vegan, gluten-free, and refined sugar free Apple Cranberry Crumble – Elimination Diet Dessert Recipe.

This dessert is awesome. This crumble is one my most favorite desserts – this and strawberry shortcake. It is just one of those desserts that brings back yummy memories. And what a better way to start off the new year in a healthy light than by baking a sugar-filled classic into something super-healthy. I used only maple syrup – and not a lot – to sweeten this and with all the apples seeming to melt while they baked, and the cranberries showing up to tart your mouth it all just rocked. Add a dollop or two of your fave vegan whipped topping and yum! And yes. It is perfect for breakfast because it’s like an amazing treat to get you off to a great start, especially since you think you’re being totally unhealthy but you really aren’t. And if you’re making this for New Year’s Eve, everyone will be so thankful for an actual baked dessert after an evening of fatty appetizers and probably a lot of booze, you may not have anything left over!

Start by peeling and coring the apples then chopping into medium like-size chunks and dumping in a large mixing bowl. Dump in the cranberries, cinnamon, and maple syrup and mix until everything is coated in goodness then dump in a large baking dish. In a small bowl mixing the oats, flour, chopped walnuts, cinnamon, and syrup with your fingers. Spread evenly over the apple mixture and bake at 350 degrees for 45 minutes. Take out and let cool about 10 minutes then serve. The top is crumbly and mixes in so well with the gooeyish apple mixture. Enjoy!

3 Fuji Apples, peeled and chopped
4 Red Delicious Apples, peeled and chopped
1 Bag Ocean Spray Fresh Cranberries
1 Tbsp Cinnamon
1/2 C Maple Grove Farms 100% Pure Maple Syrup
1 1/2 C Oats
1/2 C Bob’s Red Mill Coconut Flour
1 1/2 C Walnuts, chopped
2 Tsp Cinnamon
2 Tbsp Maple Grove Farms 100% Pure Maple Syrup

1. Set oven to 350 degrees.
Vegan and Gluten-Free and Refined Sugar Free Apple Cranberry Crumble - Elimination Diet Dessert2. Peel all the apples then chop into smallish like-size chunks. Dump apples into a large bowl.
3. Add cranberries, cinnamon, and maple syrup and mix.
4. Dump fruit mixture into a large baking dish.
5. In a smaller bowl dump in oats, almond meal, cinnamon, chopped walnuts and mix.
6. Add maple syrup and mix. Use hands to sprinkle mixture over fruit.
7. Bake 45 minutes.
