Because really, this is the perfect thing to serve to a bunch of people because you can make a ton of this for a party or just a smaller amount for an easy after work dinner. Since the Super Bowl – the best appetizer day ever – is right around the corner I figured I’d get started getting my recipe ideas out there. The biggest thing about any party, but the Super Bowl specifically, is easy and simple and semi-quick – or at least be able to get all the prepping done beforehand. Because if a game is on then you seriously don’t want to miss it. I like watching football but I’m not addicted like others; pretty much if it’s on I’ll watch it and if it’s not then I won’t. But the Super Bowl? I like to watch that, especially during the breaks because I want to see all the commercials! And that means there is no time to be in and out of the kitchen! This recipe can be all prepped before the game and popped in the oven with just like a five minute kitchen break to mix and sprinkle cheese then bake again and done. Easy, simple, and low stress. Have the time right before the game starts? Defrost the cauliflower in the microwave and cut the potatoes while it defrosts!
The easiness of this recipe is that the cauliflower is frozen and the potatoes can be cut up and placed in a bowl of water until you’re ready – have time right beforehand? Slice the potatoes as the cauliflower defrosts in the microwave! Pop the cauliflower in the microwave and defrost in two minute intervals; slice the potatoes thinly and place around the outside of the non-stick sprayed baking sheet. Dump the cauliflower in the middle of the pan. Bake at 375 degrees for 35 minutes. Take the pan out and flip the potatoes and cauli then sprinkle the cheese over everything then bake 20 more minutes. Take out and enjoy!
Cheesy Roasted Potatoes and Cauliflower,
2 Baking Potatoes
1 Bag Frozen Cauliflower, defrosted
1 Bag Daiya Cheddar Style Shreds
2 Tsp Olive Oil
1 Tsp Black Pepper
1 1/2 Tsp Trader Joe’s 21 Seasoning Powderr
1 1/2 Tsp Garlic Powder
1. Set oven to 375 degrees and spray a baking sheet with non-stick spray.
2. Defrost cauliflower in the microwave in two minute intervals.
3. Slice potatoes thinly and lay around the baking sheet.
4. Spread cauliflower in the middle of the baking sheet.
5. Drizzle olive oil then sprinkle spices over everything.
6. Bake 35 minutes.
7. Take the pan out and flip the potatoes and cauliflower.
8. Sprinkle the cheese over the whole pan.
9. Bake 20 more minutes.
10. Enjoy with a fork!
