Simple? Check. Cookies? Check. Not usually the case right? This time it is! And only three ingredients to make your life that much easier! I’m that person who buys a ton of bananas and then lets them go brown – you? Not on accident though. Oh no. I use bananas in my protein shakes and purposely put them in humid locations to brown them quicker. Gross? Heck no! They are so sweet when brown, and when you use an unsweetened no-anything protein powder you have to get your sweetness the natural way – browned, ugly bananas! Browned bananas are also awesome in cookies, and bread, and also in these vegan and gluten-free Simple 3 Ingredient Cookies.

Who wants to eat cookies with me now after that intro? I mean ugly banana cookies? Those sound rockin’ right? Can you see why I didn’t let that be my recipe title? I don’t think that would have gone over well. But simple three ingredient cookies sounds awesome, and made you look right? And seriously, this is one of the most simple cookie recipes ever, and healthyish. When you are wanting something snack- or treat-like it is always hard. I always want to bake the treat because then I can control the ingredients that go into them, but I know that if I bake something then I will lose all self-control and eat the entire thing in almost one sitting … okay, one sitting. So then I end up buying the treat and eat the same amount of calories as I would have just baked, and none of them any good. And possibly not gluten-free, soy-free, or vegan. So simple and almost-healthy cookie baking it is. Why almost healthy? Chocolate chips people!

Peel and dump the brown-as-possible bananas into a blender or food processor. Whirl those bananas into a creamy puree. Dump the oats and chocolate chips into a mixing bowl and then pour in the bananas. Mix it all really well then spoon onto parchment lined baking sheets. Bake at 350 degrees for 15 minutes. Are they super-sweet? No, and thank goodness for that! No eating the whole pan at one time! I can enjoy these without the sugar rush or crash! Enjoy!

4 Brown Bananas
2 C Oats
1/2 C Enjoy Life Mini Chocolate Chips
1. Set your oven to 350 degrees and line baking sheets with parchment paper.
2. In your blender or food processor, whirl the bananas into liquid.
3. Dump oats and chips into a mixing bowl and pour in the banana puree.
4. Mix well then spoon onto baking sheet.
5. Bake 15 minutes.
6. Enjoy!
