All that glorious cheese! But, we don’t need all that right? No. But when you’ve got a hankering you’ve got a hankering, so what do you do? Make them so you can just eat it and get it out of your system. That’s what you have to do with want – eat it, then get rid of it. Because if you fixate on something, think about it all the time and not allow yourself that little piece of enjoyment? Oh boy, it’s out of control, eat-the-house time. So just give in once in a while to your craving, enjoy it and don’t freak out that you ate it. Just don’t make a big monster-size portion and your good! No meat in your nachos? Nope – after those Biscuit Taco Cups I was really wanting that filling again, but not the biscuits. Something just as bad for you, but not so heavy. But definitely that filling again! The combo of those flavors were so good, I was perfectly okay eating the leftovers as they were. With this recipe I didn’t have that glorious canned tomatoes stewed with the chilies, so I had to improvise and use a can of chopped green chilies to get the spice and a can of fire roasted tomatoes which I always have on hand. And the chips? Have you tried Beanfields taco chips? This is not a sponsored post so honest opinion time – they are not for everyone. I was so, super excited to try the Ranch flavor right when it came out last year and I happened to have been visiting my SIL, and we and my awesome niece and nephews always end up having lunch at least once at Whole Foods. So we hit the salad bar and I got a bag of those ranch chips … wa-wa-wa. A let down. So when I won a box full of different Beanfields chips a few months ago I was a little leery. Granted they were all free, so who am I to complain since I did enter the contest right? And let me say – ranch flavor aside – yum! After eating the entire bag of pico de gallo I had to hide the bags of chips from myself! That flavor was amazing, and pairs perfectly with these nachos!

Chop your mushrooms into small bits and saute with a little olive oil until browned on medium heat. Chop the peppers and onions into small pieces. Once mushrooms are brown dump in the veggies and saute. Add a little more oil to get things going. Add in the tomatoes, drained chilies, garlic, and taco seasoning and mix really well. Turn to medium-high heat and cook until liquid is gone and everything is browned. About 10-15 minutes. Once veggies are done spread a layer of chips on a microwave-safe plate then sprinkle a little cheese shreds then top with veggie mix and a little more shreds on top of that. Microwave 1-1:30 minutes – just until shreds are melty. They may not all melt – Daiya is a little weird and doesn’t microwave-melt like normal. Then just eat and enjoy! The leftover veggies? You can either freeze for future taco nights, put in the fridge for more nachos, or bake a small spaghetti squash and mix it all together for healthy spicy spaghetti night!

2 C Beanfields Pico de Gallo Chips
1 12oz Cntr Sliced Mushrooms, chopped small
4 Tbsp Olive Oil
1 Red Pepper, chopped small
1 Green Pepper, chopped small
1 Bunch Green Onions, chopped small
2 Tbsp Minced Garlic
1 Can Green Chilies, drained
1 14.5oz Can Muir Glen Fire Roasted Diced Tomatoes
2 Tbsp Homemade Taco Seasoning
1/3 C Daiya Cheddar Shred

1. Chop mushrooms into small pieces. Heat saute pan on medium heat with two tablespoons olive oil. Vegan and Gluten-Free No Meat Nachos - the Perfect Game Day or Appetizer Yumminess!Dump in mushrooms and mix then let brown, stirring so they don’t stick.
2. Chop peppers and onions into small pieces.
3. Once mushrooms are brown dump in veggies with rest of oil and mix. Saute until veggies are soft.
4. Drain chilies then add to pan with tomatoes, garlic, and taco seasoning. Mix really well.
5. Turn heat to medium-high and cook until all liquid is gone.
6. Spread chips on a plate then add a little cheese shreds.
7. Top with a little veggie mix then a little more cheese.
8. Pop in microwave for one minute and see how it looks. Microwave 30 more seconds if needed.
9. Enjoy!
