…cantaloupe breakfast bowl? What? You heard me right! Who say’s a breakfast or lunch bowl has to be in a real bowl? Certainly not this girl – less dishes the better! And wow, is this the yummiest thing ever. An almost edible bowl filled with your favorite morning goodies and bam. Breakfast in almost an instant! This month’s The Recipe Redux recipe inspiration was to come up with a plant-based power bowl … which is both fun and expensive. Or can be, at least. If your full vegetarian or vegan then you know it’s not cheap eating fruit, veggies, frozen stuff, and buy non-dairy milks. To put a five-day power bowl together it can cost about $15 to get just the ingredients – doesn’t sound like a lot, but when you have to buy the rest of the food for the week then it adds up. Especially when you try to eat clean, no crap food, and make healthy snacks and treats. But this inspiration was something I thought I had figured out to make (and iron-rich bowl, since I am still severely anemic and started the transfusions), but with holidays here, money got tight. Then I thought outside the regular bowl. The cantaloupe bowl. Ironically I have had this type of edible bowl before, when I was a teen and a friend and I were at the fair and we got cantaloupes with vanilla ice cream and sprinkles … so not healthy, but so dang good. Substitute that bad for you treat with a healthy yogurt and top with your homemade granola? Awesome and addicting.
Start by either making this awesome Spicy Gingersnap Granola Chunks or some your favorite kind, which will take the most time. Once your granola is done and your ready for your bowl, just slice the cantaloupe in half and use a spoon to scoop out the seedy innards. Slice up your favorite berries and get your favorite yogurt out. Slop the yogurt into cantaloupe hole, top with berries, then top that with your granola! So simple and easy to prepare in the morning for quick eats! Enjoy!
Cantaloupe Breakfast Bowl,
1/2 Cantaloupe, seeded
6-8 Strawberries, halved and sliced
1 Cntr So Delicious Dairy Free Greek Vanilla Yogurt
1/3 C Gingersnap Granola Chunks
1. Slice a whole cantaloupe in half then spoon out the seeds.
2. Dump in one small container of vanilla yogurt.
3. Wash and slice a few strawberries and cover the yogurt.
4. Sprinkle granola over the stop and then start eating.
5. Enjoy!
