Okay, so it’s Halloween – the biggest candy day of the year, almost everything is black and/or orange, so why am I posting a green or salad recipe? Uh – because I need to negate the candy that’s why! I know I’m going to pig out on it, it’s inevitable and I accept it. But I also want to fill up on something flavorful and filling that will help counter the sugar cravings! I hope you get to eat something as good as this vegan and gluten-free Green Sesame Noodle Salad.
I love when recipes go right, and sometimes when they go wrong. This salad was meant to be oodles of noodles that are like zoodles … except have you ever tried zoodling something? I had yet to only noodle up a sweet potato and apple, and since they are firmer in texture and better shaped they were no problems to noodle up. But a zucchini? Or a small in size carrot? Soft-insided cucumbers? Sheesh, this salad was a lot more trouble than it was worth by the end. I wanted to toss the dumb zoodler in the trash, never to see it again. I’m not a gadget person, never have been so I should have known better than to try. But the awesome thing about veggies is that they chop up well. So this became a normal salad with a pop of orange because I need some good filler for the salad. The thing that really made the salad though was the dressing. I hadn’t really tried a sesame-type vinaigrette before, but yum! It’s so flavor-forward that you don’t really need anything else. Which will be great for Halloween – who wants chocolate with a sesame undertone? Not me!

Start by adding all the dressing ingredients to the bottom of a large bowl – if you are going to chop (or if you are a zoodle professional and know how to do it) the veggies for meal prep then go ahead and make the dressing in a small bowl or jar and store in the fridge future use. Whisk the dressing with a fork or whisk then just start chopping up all the veggies and dump straight into the bowl. Then just mix it all up and chow down. Super simple salad when it’s chopped! It may not look like a lot of dressing to how much veg is used, but it will cover all the veggies, don’t worry.
Green Sesame Noodle Salad,
1/4 C Cilantro, chopped
2 Tsp Fresh Crushed Ginger
1 Lime, juiced
2 Tbsp Rice Wine Vinegar
1 Tbsp Sesame Oil
1 Cucumber, chopped
1 Zucchini, chopped
2 Carrots, chopped
2 Green Onions, chopped
1/2 Pkg Bean Sprouts
1. In a large bowl dump chopped cilantro, ginger, squeezed lime, vinegar, and oil and whisk.
2. Chop the cucumber, zucchini, carrots, and green onion into small pieces and dump into the bowl.
3. Add the bean sprouts then mix everything well.
4. Enjoy!
lol! I actually love my Spirilizer and making oodles of noodles. But yes, cucumbers are too soft. This does look like a yummy salad for sure. Sorry to hear your gadget was giving you grief.
