Vegan, Gluten- and Sugar-Free PB Chocolate Protein Baked OatmealThere is just something about – 1. Peanut butter, 2. Really good chocolate protein powder, and 3. Ooey baked oatmeal. I don’t know why I love it so much, but it’s really the most amazing thing ever. Not only straight from the oven and eating with a spoon, but also cold for a quick breakfast for on-the-go. It’s been quite a while since I’ve made baked oatmeal. Even just eating oatmeal! I have the Plant Fusion Chocolate Brownie Protein Powder daily before my early morning workouts and love it. It actually dissolves in the almond milk! What? A protein powder that isn’t caky and actually dissolves in any milk exists? Why yes it does! Not only that, but it tastes good just by itself! Another rareity seeing as it’s so low in sugar that it barely has any in it! I’ve been wanting to make healthy weekend breakfasts and take mini-breaks from the powder/milk routine and decided I’d use all of my favorite things in one baked meal. Yummy – and hard to resist!! – peanut butter, banana, and chocolate baked oatmeal!

Start by mixing the dry ingredients in your baking dish then setting aside. Mash the banana with the vanilla paste until smoothish – this all depends on if you want some banana still in the baked oatmeal or not. I did so I just mashed enough to be able to mix. Then add the milk and semi-melted coconut oil and mix. Pour into the baking dish then mix. Bake at 350 degrees for 45 minutes. Enjoy!

PB Chocolate Protein Baked Oatmeal,

1 1/2 C Oats
1 Scoop Plant Fusion Lean Chocolate Brownie Protein Powder
1/2 C Jif Peanut Powder
3 Tbsp Unsweetened Cocoa Powder
2 Brown Bananas
2 Tbsp Vanilla Paste
3 Tbsp Coconut Oil
2 C Almond Breeze Unsweeted Vanilla Almond Cashew Milk

1. Set oven to 350 degrees.
2. Mix oats, protein and peanut powder, and cocoa in the baking dish and set aside.
3. Madh both bananas with the vanilla paste in a smaller bowl.

5. Pour the banana mixture into the baking dish with the dry ingredients and mix until combined.
6. Bake 45 minutes.
7. Let cool enough to eat and enjoy!
