So I was wanting a dessert….I think needing is more the word. I didn’t want to buy something since I am still being as clean as possible and didn’t want crappy foods in the apartment. I had held off as long as possible on the sweets…until Saturday morning. So I guess my apple crumble for one was more of a breakfast than a dessert 🙂
It was 7:30 in the morning and I probably woke up needing a sweet thing. Normally it is just a banana or celery with a tablespoon of peanut butter and then on to workout. (Yes I eat celery for breakfast). But the need for sweet was to great, and I hadn’t used my maple syrup that I bought for “clean” baking yet (why is pure maple syrup so expensive?) I decided who cares if it’s dessert for breakfast?
This was the easiest thing ever. One larger apple, cut in half and cored. Place open face up in plastic container or on a plate. In small container mix crumble ingredients and stir. Plop onto each apple half and stick in microwave for 5 minutes. Done. Yum! Not to sweet for my blood sugar, and it was like crumbly applesauce! So simple!
1 Medium/Large Gala Apple, cut in half and cored
1/8 C Dried Oats
1/8 C Raisins, packed
1 Tbsp Cinnamon
2 Tbsp Pure Maple Syrup
1. Wash and dry apple. Cut in half and carefully cut out core. Place in microwave safe container or on a plate.
2. In small container measure out all the rest of the ingredients and mix well with a fork.
3. Fork crumble ingredients onto apple halves.
4. Bake in microwave for 5 minutes.
5. It is hot, but enjoy!
