You know you get bored with the same breakfasts when you are eyeballing everyone else’s at work. Or drive by McDonald’s and yearn for something totally unhealthy. Or thinking about your awesome lunch when it is only 9am. It has been time for a breakfast change-up for a while-as much as I love my peanut butter with celery it is getting old. Here is my Vegan and Gluten Free Cherry Baked Oatmeal.
I loved the last recipe I created for the baked oatmeal, but it was so long ago-a year now-and was ready for something a little hearty and healthy and something that would also be a great pre-workout snack. This is really the easiest baking recipe ever and I love all-things oatmeal so I decided to make it with real fruit in it this time, instead of raisins.

This time around I used the no-calorie sweetener which I have been using a lot of lately. No reason other than having the large bag in my cupboard and with making large batches of everything, the no-cal is the way to go. I also used two bags of unsweetened defrosted cherries. Not a lot of sweetness going on in this recipe which is why I used a few different spices with this. With all the oats going into baked oatmeal, you need more than you think-a lot of cinnamon, a little ginger, and some nutmeg.

The biggest difference this time was something that is new to the market and in my fridge. Yeah coupons! I had a coupon for any one So Delicious item and decided to take a chance on the Cashew Milk…cashew milk! Cashews are everywhere in recipes nowadays, so I thought why not give it a try! I got the unsweetened vanilla and it was so good! A little creamier than a soymilk and not as sweet, which I think will be perfect in a morning cereal also! So glad I found this, and can’t wait for the half gallons to make an appearance.
Vegan and Gluten Free Cherry Baked Oatmeal, 45 squares
2 Bananas, mashed
1 Tbsp Vanilla Bean Paste
1/2 C No-Cal Sweetener
1/4 C Milled Flax Seed
1 Tbsp Cinnamon
1 Tsp Ginger
1/2 Tsp Nutmeg
1 Tsp Salt
1 Tbsp Baking Powder
5 C Oats
2 3/4 C So Delicious Cashew Milk
2 Pkg Defrosted Cherries

1. In large bowls mash both bananas and vanilla bean paste together.
2. Add no-cal sweetener and mix.
3. Add all spices and salt and mix.
4. Add 3 cups oatmeal and mix then add rest of oats and cashew milk.
5. Add cherries with defrosted juice.
6. Bake for 60 minutes. Let cool and cut.
7. Keep refrigerated and enjoy!

Ooh, what a great snack! I’ve never thought to bake oatmeal like this, but I love the sound of the cherries and spices so I’m bookmarking this for later!
These are definitely a great snack and so low cal for no guilt. Great tasting and super easy.
