I don’t know if you can tell, but I love soups. Healthy soups that are low-cal and super-duper healthy. I have been feeling like I have been overeating way to much lately, and maybe eating just enough of the wrong stuff. So I decided on a different soup full of greens and beans and homemade Tuscan seasoning. Here is my Tuscan Greens and White Bean Soup.
A couple of weeks ago I had been at Marshal’s and found this beautiful jar of Tuscan Seasoning…but I couldn’t force myself to buy it. I think I wanted the jar more that the seasoning in it. So I came home and looked up how to make the seasoning. I had everything except the fennel seed. So after I got that I made my Tuscan Seasoning.

Homemade Tuscan Seasoning:
1 Tbsp Ground Fennel Seed
3 Tbsp Garlic Powder
6 Tbsp Dried Basil
1/2 Tbsp Salt
2 Tbsp Rosemary
2 Tbsp Oregano
So I had my seasoning and now was the time for the soup. And of course how I wanted it to turn out was bigger than my pot almost. I knew kale and spinach were going to go in it. When I got to the store I saw that the fresh spinach was almost $2 a bunch! What? No way was I paying that, so I picked up the kale then saw the cabbage was super cheap and picked one up. Then to the freezer aisle to see if the frozen was cheaper. Yep, only .95 and right next to it was collard greens for the same price.

Next I had to choose the type of white bean. Well, again it was all about the price. The cheapest was the white butter beans, those big ole beans that are really creamy tasting. Then on over to the veggie stock aisle. Sheesh, if I didn’t find only two options for vegetable stock and both on the expensive side. I only got two cartons and new water was my next best option!
This soup was super fast since almost everything was pre-packaged. I poured in the stock and the seasoning and let it boil for 10 minutes. Then I added the kale and onion and let that boil for 10 more minutes while I cut the cabbage. In that went and let that all boil together for 30 minutes. After 30 minutes I poured in the washed beans, spinach and collard greens. Boiled for one hour then ate. Yum!
Tuscan Greens and White Bean Soup, 12 servings
2 Cntrs Veg stock
Homemade Tuscan Seasoning
1 Bunch Kale, washed and chopped
1 Large Onion, chopped
1 Head Cabbage, washed and chopped
5 C Water
3 Cans White beans
1 Pkg Frozen Spinach
1 Pkg Frozen Mustard Greens
1. Pour vegetable stock and seasoning into large pot and bring to a boil.
2. Wash kale and destem. Chop and add to pot. Chop onion and add.
3. Boil for 10 minutes while cutting washing and chopping cabbage.
4. Add to pot and boil for 30 minutes.
5. Open and wash beans then add to pot. Add frozen spinach and collard greens.
6. Boil for 60 minutes, stirring occasionally.
7. Portion out and enjoy!

I just discovered your recipe and it sounds great. But, how much of the Tuscan seasoning did you use? All of It, or just a portion?
Hi Jamie and thanks! I used the whole Tuscan seasoning recipe-this made a large soup, so the seasoning wasn’t to strong.
I’m making the soup now. When do you add the 5 c of water? With the cabbage or with the beans?
Yeah Jamie I am glad you are making this! Hope you love it as much as I did. Broth based soups are super easy. Sorry for not clarifying, the water goes in after the greens.
