Banana Bread Oatmeal – Eating for One

foods 017 (782x800)This is just a simple, feel good type of breakfast. Something in the morning to fill you up, keep you going until lunch, hold you over during those wanna-eat times. Keeping it simple in the morning is essential for me – too much fuss and I don’t make it. Usually. Oatmeal is so yummy and delicious, and what better type of breakfast to have than a Banana Bread Oatmeal?

What else would cover all those requirements in your morning other than oatmeal? And a banana bread oatmeal? Come on! All those calories from just a slice of bread – nope. Feel good about eating calories in your oatmeal? Yep, for sure. I love an oatmeal in the morning, especially after a hard workout – it makes me feel like I am getting real fuel in me and not being detrimental to all the good I have just conquered at the gym – this one especially since the calories are coming from a semi-sweet breakfast that will seriously carry you from morning to noon. No side munching necessary! This recipe is also awesome because you get to use your browned bananas in a different way, not just in a baked good!

This one is just as easy as the Overnight Oats recipe I made last year, but with bananas and pumpkin spice, you cannot go wrong. Just use a microwave safe Tupperware-type of bowl and add everything. Using a fork mash the banana into everything, mixing well. Cover and put in fridge overnight. Microwave in the morning, adding extra water or milk as needed – I like mine on the runny side, but if you like a firmer oatmeal, don’t add until the end. Mix it all again and enjoy!

1/2 C Uncooked Oats
1 Ripe Banana
1 C So Delicious Almond Plus Vanilla Milk
2 Tsp Pumpkin Spice
1/4 C Raisins
2 Tbsp Maple Syrup

1. In a microwave safe bowl add all ingredients.
2. Using a fork, mash and mix all ingredients.
3. Put lid on and store in fridge overnight.
4. Microwave until warmed through – about 4-5 minutes.
5. Enjoy!
