Taco Hummus

Vegan and Gluten-Free Taco HummusWell, it is a new week and my first work week in Washington, DC. Unbelievable really; I still can’t believe I am here and about to start another new job. But with new jobs comes new trials, some trivial … like what to take to work to eat the first week. I mean I don’t even know if there will be a microwave or refrigerator or even a coffee pot. So I had to think outside the eating box to come up with some easy to transport meals, and something that wouldn’t go bad sitting out for a few hours. Here is my vegan and gluten-free Taco Hummus.

Sounds to simple too be true right? Hummus for lunch? Well lunches don’t always need to have tons of ingredients or have to be super-elaborate. Yes I do realize that hummus is more of a snack, but when you need something healthy and filled with protein then I think hummus is the way to go. And this hummus is full of rehydrated beans, tomatoes, homemade taco seasoning, minced garlic and (not pictured) grapeseed oil. Simple, and easily transportable since I will be riding a shuttle then a train to work, and my first day will be filled with paperwork in HR, so this will be perfect.

Best thing about hummus is that it is easy to get everything together and get blended. I soaked dried beans overnight then boiled them all, following the directions on the bag. Then I measured out the beans and dumped into the food processor and froze the rest to save for a future recipe. Cut tomatoes into slices, measure out and dump in taco seasoning then mince in garlic. Turn on then pour in two tablespoons oil. Mix until smooth and creamy then enjoy with crudites!

Vegan and Gluten-Free Taco HummusTaco Hummus,

2 1/2 C Black Beans, soaked and boiled
3 Small Tomatoes, sliced
2 Tbsp Homemade Taco Seasoning
3 Garlic Cloves, minced
2 Tbsp Pompeian Grapeseed Oil

1. Soak beans overnight then drain and rinse. Boil beans in water as per package directions.
2. Rinse beans then measure out and pour into food processor.
3. Rinse and chop tomatoes and dump in.
4. Mince in garlic and measure taco seasoning into FP.
5. Turn on FP then pour in oil and process until smooth, scraping sides if needed.
6. Enjoy!
