Who in the world doesn’t love to make theme-type recipes? I mean St. Patty’s day is all about the green – especially wearing it so you don’t get pinched. I am so enjoying the green-theme and making some holiday green dishes. Yes – you’ll see a few more up until St. Patty’s Day, but these recipes are also awesome for any day, not just the green day. And this appetizer is perfect for game day, any holiday, or just for the heck of it day. Vegan and gluten-free St. Patty’s Day Guachio Dip.
So can you guess what guachio is? If you guessed guacamole and pistachios then you were right! I had been thinking of making some guacamole just for the heck of it – because who doesn’t love homemade guacamole, right? However, since I constantly try to rethink and remake a recipe, I needed a way to take it to the next level. And what better way to do that than with pistachios and make a real dip? I love, love, love pistachios just like everyone but dang they are so expensive right? I mean, even with a coupon they are ridiculously expensive. But thank goodness for the bulk bins at supermarkets carrying already shelled nuts so I didn’t have to go to that trouble. This is a true dip in the essence that is thick and creamy, super fast, minimal ingredients, and gets better the longer you let it set. And it’s great with chips or veggies!

Easiest guacamole ever. Dump the roasted pistachios into a small food processor, toss in the red onion, garlic, dried cilantro and black pepper. Carefully slice the avocado in half then take the pit out. Spoon the avocado into the fp and turn on to grind a little. Turn off and add water then let whir into dip. Then just eat it up and enjoy! If you wanted a looser dip, just add a quarter cup of water at a time until you get the consistency you want.
St. Patty’s Day Guachio Dip,
3/4 C Roasted Shelled Pistachios
2 Avocados
1/4 Small Red Onion
2 Tbsp Minced Garlic
2 Tbsp Dried Cilantro
1 Tsp Black Pepper
1/4 C Water
1. In a small food processor dump the nuts, onion, garlic, cilantro, and pepper.
2. Carefully halve the avocado and take the pit out. Spoon avocado into the FP.
3. Turn on to grind a few seconds then add in the water.
4. Turn on and let it whirl into dip consistency. Add more water if you don’t want it thicker – a quarter cup at a time.
5. Dump in a pretty bowl and enjoy!
