One of the most favorite things at the holiday table, besides cranberry sauce, is the classic sweet potatoes casserole. All that ooey brown sugary sauce and the gooey marshmallows on top – forget the sweet potatoes. But oh man, talk about sugar bomb overload. But not these – this vegan and gluten-free Chai Spiced Sweet Potato Casserole is the perfect healthier addition to the table!
Everyone loves the classic sweet potato casserole with all the glorious, and if done right brown and crunchy, marshmallows. But sometimes you want to make it a little different – have a little fun and you make individual ones. Or you make it just a tad bit healthier, by not using any marshmallows and using less sugar. This option is spiced with a little homemade Chai – ingredients listed below – so there is a little spice and sweet in the potatoes, then oh man. That glorious streusel-style topping. That’s where the sweet is. I made the actual potatoes less sweet on purpose, because all anyone ever wants is the topping right? Just scrape the top and eat it like candy? Yes, this topping is that good!

Start by doing the thing that takes the longest – microwaving the potatoes! I swear the sweet potato takes way long to microwave than any other potato! Once the potatoes are finally done turn the oven on while the potatoes cool enough to handle. Once they’re cool scrape or squish out the flesh into a bowl then add the rest of the potato ingredients. Mash until smooth, or leave a few chunks – texture is up to you! Then plop into a baking dish and spread out. Mix the streusel topping in a small bowl then spread out of over the dish. Bake for 30 minutes then enjoy! This is also amazing as leftovers!
Chai Spiced Sweet Potato Casserole,
Chai Spice
2 Tsp Ground Ginger
2 Tsp Allspice
2 1/2 Tsp Cardamom
2 Tbsp Cinnamon
2 Tsp Cloves
2 Tsp Nutmeg
3 Large Sweet Potatoes
1/3 C Unsweetened Applesauce
1/3 C Coconut Sugar
1/2 C So Delicious Dairy Free Unsweetened Coconut Yogurt
2 Tbsp Chai Spice
1 Tbsp Vanilla
Streusel Topping
2/3 C Chopped Pecans
1/3 C Oats
2 Tbsp Coconut Flour
1/3 C Coconut Sugar
3 Tbsp Coconut Oil, melted
1. Wash and poke holes in sweet potatoes. Microwave until very soft.
2. Set potatoes aside to cool.
4. Set oven to 400 degrees.
5. Scrape out the potatoes into a bowl then add the applesauce, sugar, yogurt, chai, and vanilla and mash until smooth.
6. Spread out into a square baking dish.
7. In a small bowl add all the streusel topping and mix.
8. Sprinkle evenly over all the potatoes.
9. Bake 30 minutes.
10. Enjoy!
