Sometimes your on a diet (sometimes?) and you want comfort food. That comfort food doesn’t necessarily mean fattening or sugary, it means the ease of popping a can and dumping in a bowl and microwaving. Soup – tomato soup. Here is my easy vegan and gluten-free No Blend Tomato Soup.

It’s The Recipe Redux time and this months theme was making a recipe for less than $3 per serving – boom, done with this recipe. So I’m on the Whole30 diet for the month and yes, I can have tomatoes. Which meant I was making a huge pot of easy soup. I’d watched my SIL make this over the holidays and she made it look super easy – she used and immersion blender. Well I don’t have one, and knew I wasn’t going to want go to the trouble of blending in the blender. What to do? Grate the onions and use mostly crushed tomatoes that’s what! This soup, because I got all the ingredients on sale, cost … wait for it … $1.62 per serving!! One huge pot, 8 servings! Win!!
Start by halving the onion and peeling the outer skin off then grating, if you have little pieces just mince those. Toss into the pot with some broth and the garlic and let cook. Then add all the tomatoes, chilies, broth, and herb d’Provence (subtle flavor), and let cook about 30 minutes. Simple and cheap! Enjoy!
No Blend Tomato Soup,
1 Large Onion
1 Cntr Imagine Foods No-Chicken Low Sodium Vegetable Broth
1 Tbsp Herb d’Provence
2 Tbsp Minced Garlic
1 Can Muir Glen Tomato Paste
2 32oz Cans Muir Glen Crushed Fire Roasted Tomatoes
32oz Can Muir Glen Chunky Tomato Sauce
16oz Can Crushed Fire Roasted Tomatoes
1 Small Can Hot Hatch Chilies
1. Halve onion and peel outer layer off. Grate onion into shreds. If little pieces are left then mince with a knife.
2. Let the onions cook until just tender then spoon in the tomato paste and stir in the paste really well.
3. Dump in the rest of the broth, the Herb, all the tomatoes and the can of chilies and stir well.
4. Let cook about 30 minutes them enjoy!
