Sugar-Free Roasted Snack Almonds - Elimation Diet and Whole30 SnacksI finally tried the whole roasting your almonds for a different flavor thing, and oh man! Was I (and my friendly family snackers) pleasantly surprised! Of course I couldn’t stop with just trying one flavor, I had to try a few – because you never know right? These have absolutely no sugar or sugar byproduct on them, so go to town with the Whole30! I hope you try your own flavored of Sugar-Free Roasted Snack Almonds.

I just got off the Whole30 diet, and let me tell you I have done some hard diets in the past … this one? Hard. Core. The Elimination Diet has nothing on this, let me tell ya. Luckily for FB support groups I wasn’t the only one going through the crazy symptoms alone, because it was rough. Worst of all they don’t want snacking. That’s tough stuff! But when your allowed some almonds, the raw ones just get tiring. Spice those bad boys up with some herbs or spices. For these I wanted to try a few different flavors to see what I liked best. And OMG – Vanilla Cinnamon? It is totally going to be my go-to snack! I also made some plain cocoa and some pizza seasoning – those were a hit too. The cocoa just didn’t have enough flavor because it was unsweetened. Duh.

This was super easy – and I say that a lot, but this time I’m serious. Either portion your nuts into bowls to make different flavors or dump a large amount into one bowl. I think the same amounts of seasoning could be used on a lot of nuts because it seemed to have a lot left on the foil. I don’t think you need as much oil either, maybe two cups nuts to one tablespoon oil? We’ll figure it out – it’s all good eating!

3 C Raw Amlmonds
3 Tbsp Coconut Oil, melted

1 Tbsp Trader Joes Unsweetened Cocoa Powder

1/2 Tsp Cinnamon
1 Tbsp Vanilla Paste

1 Tbsp Pizza Seasoning

1. Set oven to 350 degrees. Line a large baking sheet with foil.
2. Pour one cup nuts each into three bowls.

4. Melt the oil then evenly pour over the nuts, then mix well.
5. Dump nuts onto pan.
6. Bake 20 minutes.
7. Let cool completely until the oil hardens.
8. Enjoy!
