Vegan and Gluten-Free Oatmeal Cookie Baked OatmealSo for breakfast my first week of work I didn’t want to be carting around tons of veggies with PB, what with the Taco Hummus for lunch with veggies, so I decided to have baked oatmeal and an apple. Mmmm, baked oatmeal. It is all the good things that come to you in a normal bowl full of oats, brown sugar, and raisins, but baked into a bar and OMG! This is the most awesome vegan and gluten-free Oatmeal Cookie Baked Oatmeal I have made yet.

Baked oatmeal is one of those things that comes together super fast, but takes awhile to bake. The basics of a good baked oatmeal is a ton of oats and vanilla soy or almond, a couple bananas and cinnamon. Add some type of sugar, baking soda (which I don’t think really does much for it, but I add it anyway since I am baking), vanilla extract and raisins to liven it up and you have an oatmeal cookie type of baked oatmeal. This recipe makes a huge batch so the half-cup of brown sugar doesn’t make this too sweet, which I love. The cinnamon and raisins makes this a truly yummy breakfast!

Heat oven to 350 degrees and spray a baking sheet with non-stick spray. In a large bowl mash the bananas and vanilla – if your bananas are a little hard, microwave them for about 30 seconds to soften them up. Add the brown sugar and mix well; add the flax and cinnamon and mix again. Add 3 cups of oats and mix then add the rest of the oats and your milk and mix it all really well. Add the raisins and mix again. Pour into the baking sheet and spread out evenly. Bake for 50 minutes. The bottom of mine was very dark but it was only from the brown sugar and cinnamon – not from being burned.

2 Bananas
2 Tbsp Vanilla Extract
1/2 C Dark Brown Sugar, packed
2 Tbsp Cinnamon
1/4 C Bob’s Red Mill Flax Meal
2 Tbsp Baking Soda
5 C Bob’s Red Mill Gluten-Free Oats
3 C Silk Light Vanilla Almond Milk
1 C Raisins

Vegan and Gluten-Free Oatmeal Cookie Baked Oatmeal1. Set oven to 350 degrees.
2. In a large bowl mash bananas and vanilla extract.
3. Add brown sugar and mix well.
4. Add cinnamon and flax meal and mix really good.
5. Add baking soda and 3 cups of the oats and mix.
6. Add rest of the oats and all the milk. Mix good.
7. Add raisins and mix again.
8. Spray a baking sheet with non-stick spray then pour in liquidy oats. Spread out over pan evenly.
9. Bake 50 minutes.
10. Let cool then slice into portions.
11. Enjoy!

  1. I love baked oatmeal, so why not have it to go in an easy to carry form? Another good option for my day of back to back classes for the yoga teacher training program I am in, and hoping to get thru!

    I used to get a really good bowl of hot baked oatmeal at a local coffee house in Wisconsin. I was always happy for that being available, with soy milk to add on top. My ex worked there at the time, and I would drive him, knowing i could order that!
