What do you do when you are on vacation and need dessert? Well, make it duh. But if you are anything like me when you are on vacation, vacation-brain sets in … vacation-brain? Yes, that’s what I call mindless eating when on vacation. The total forgetting of all dieting / healthy eating / all-good-for types of food, and just eating anything and everything, and not necessarily really enjoying it. That’s the worst part of vacation-brain, not actually enjoying the food and overeating. But this dessert? Totally making good and positive choices …. just wish I had made more of this awesome vegan and gluten-free Strawberry Banana Nicecream.
I love making banana ice cream, I just haven’t in forever – mainly because my jumbo food processor is in storage still and I don’t have a high-powered blender like mom does. Because that’s where I was on vacay – mom and dad’s house. Where else do you go to just chill and veg and do nothing? Mom and Dad’s house 🙂 I always get a ton of bananas when I go there (well, no matter what I always have bananas) so I can make protein shakes, but I also was trying to desperately not gain weight (like I always do) coming back from vacation (totally not successful). In comes homemade ice cold treats. The Texas weather was more random than usual, but you can never not have ice cold treats!
Banana ice cream is not new, it’s been around for years (see my below recipes) but I just rarely ever make it anymore since I add bananas to my protein shakes every night. I have actually been wanting to make strawberry banana ice cream for years, but didn’t want to waste the strawberries that way – I normally just eat an entire package in one sitting, but they were on a mega-sale and my mom bought a TON of strawberries and they had to be used up – so I did. Freeze your bananas in chunks on a wax paper lined baking sheet until solid. When ready take the pan out of the freezer and set on the counter then wash and hull the strawberries. Dump strawberries into the blender first then add protein powder and milk and blend. Add the bananas and blend until smooth. Enjoy!
Strawberry Banana Nicecream,
2 Bananas, chunked and frozen
5-7 Strawberries, washed and hulled
2 Tbsp Vega Protein Smoothie Viva Vanilla
1 C Almond Breeze Unsweetened Vanilla Milk
1. Line a baking sheet with wax paper.
2. Peel and chunk bananas and spread of baking sheet.
3. Freeze until banana chunks are solid – at least 2 hours.
4. Take pan out of the freezer to let thaw while washing and taking the stem off the strawberries.
5. Dump strawberries into the blender then add the protein powder and milk and blend.
6. Add bananas and blend until smooth.
7. Eat immediately for dreamy thick ice cream; freeze and let thaw to enjoy later.
