Tropical Freeze

Tropical Freeze The temps continue to rise here in ole San Antonio, hitting close to 80 degrees…in February!! Can you believe that?  I hate the heat in the winter, it isn’t natural.  It should be freezing, or at least coldish and raining here.  Hmph, but I got in the game and made this Tropical Freeze.

This freeze is super easy, cheap and quick.  It is great for quick entertaining when you need a dessert, or like me, I make a batch and portion out and freeze them so I can have them for snacks with low calories later.  My favorite!  Usually I do these freezes as a banana ice cream and coffee ice cream or even pumpkin pie ice cream…all made with bananas. They are all awesome, healthy and made of fruit only.

I got the frozen mango, pineapple and peaches from the Dollar Tree and already had the coconut milk so this dessert was only three dollars!  Add cinnamon and this was awesome.

Tropical FreezeTropical Freeze, 4 servings

1 Bag Frozen Pineapple
1 Bag Frozen Mangos
1 Bag Frozen Peaches
1 1/2 C So Delicious Dairy Free Coconut Milk
1 Tsp Cinnamon

1. Defrost frozen fruit in microwave for 1-2 minutes (you want it a little soft).
2. Add fruit, milk and cinnamon to food processor or high-powered blender.
3. Process until fruit is pureed.
4. Enjoy!
